Your first thought generally goes to the newest technological development when you learn about a new apple item, but in December 2019, supermarket stores got a genuine apple release that quickly had the food industry very excited. 


Washington State University horticulturists have introduced WA 38, or Cosmic Crisp, to the general public as a new apple cultivar. The Yakima Herald-Republic said that it was an immediate smash, receiving fantastic reviews that complimented every feature of the fruit, including its extraordinarily crisp texture and vivid scarlet skin. 


The Cosmic Crisp is a highly adaptable apple in terms of cooking because of its flavor, which harmoniously blends tart and sweet elements. Even though the Cosmic Crisp has garnered more attention for its flavor and texture, it would make a fantastic base for any apple-based dessert, such as caramelly baked tarts.



 The Washington State the development staff claimed that Cosmic Crisp apples might remain up to a year in the refrigerator before it was released. It nearly seems too good to be true, and in some ways.

Storage was considered when developing the Cosmic Crisp. The seasonality of apple supply was one of the challenges that the development team attempted to overcome. Since the majority of apples in the US are picked in the fall, delicious homegrown apples are usually gone by the time summer arrives. Apples that aren't as fresh as those grown domestically must occasionally be imported into American stores throughout the summer. The goal behind creating the Cosmic Crisp was to create an apple that would continue to taste great even a full year after harvest. They partially succeeded in achieving their objective. 


Cosmic Crisp apples, which do not fit well in a typical household a freezer, can be stored for up to a year, according to Washington State University. They are designed to be stored in controlled environment storage, which is a commercial system that, in addition to controlling temperature (much like your refrigerator), also manages levels of carbon dioxide and oxygen to help keep food from spoiling. Just one-third of the period, or about four months, is all that Cosmic Crisp apples will last in a refrigerator. Still, four months is a long time compared to other apple kinds, most of which are only good for two months in the refrigerator. Apples stored in the crisper drawer have the best chance of maximizing their shelf life. 


The Cosmic Crisp is an amazing invention.


What does it take to produce an apple that is not only durable but also receives almost universal praise for all of its qualities—taste, texture, look, and everything else an apple may have? Thirty plus years of research and growth is the answer. The Cosmic Crisp initiative had its start in the 1980s when Bruce Barritt, a horticulture at Washington State University, expressed concern that Washington apple growers had become unduly reliant on the Red Delicious variety. Farmers should avoid relying too much on a single crop variety as this raises the possibility of pests or illnesses destroying the entire crop (via Horizon). Furthermore, Red Delicious apples aren't particularly tasty. 


Barritt determined that Washington farmers needed to include a new apple variation, so the Cosmic Crisp apples-breeding project was started with backing from the university and money from the Washington Tree Fruit Research Commission. In 1997, Barritt created the first Cosmic Crisp by fusing an Enterprise apple—a very resistant to disease variety—with a Honeycrisp apple. The Cosmic Crisp didn't become widely available until 22 years after the original hybrid was created, and even now, its supply is still rather restricted. Up until 2029, Washington farmers will be the only ones allowed to cultivate the Cosmic Crisp.
